The most common type of Chinese tea, green tea is also the category where you find the most mundane teas. It is hard to find truly high-quality green teas in a market with so many mediocre teas. 

A high-quality green tea is fresh and clean. It leaves your mouth feeling refreshed, like drinking from a stream. The flavors are complex but clear. Every type of green tea is different and no two types should taste the same. They each need to have their own unique characteristics that set them apart and make them special. The key to finding great green tea is knowing each tea's characteristics and taking no teas that don't display these qualities. 

Yellow tea offers many of the similar notes and experiences. Very similar to green tea, the stir fry of a yellow tea is interrupted by a short resting and oxidating step before it is finished frying. This step gives the tea a bigger body and stronger flavors while still maintaining the cleanliness of green tea.
